Honey Cornbread Muffins - No nuts, gluten (when using GF flour), and super yummy!

I added fresh blueberries and used Bob's Red Mill 1-to-1 Baking Flour instead of wheat flour.

Ingredients
1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1/2 cup granulated sugar
1 teaspoon salt
1 cup whole milk
2 large eggs
1/2 stick butter, melted
1/4 cup honey
Special equipment: paper muffin cups and a 12-cup muffin tin

Spicy Quinoa and Black Beans (nut, dairy, wheat, egg, gluten, and animal free [use vegetable broth])

Ingredients
1 onion, finely diced
1 red bell pepper, finely diced
2 cloves garlic, minced
1 tablespoon olive oil
¾ cup quinoa
1 heaping teaspoon cumin
¼ teaspoon cayenne pepper
salt and pepper, to taste
1.5 cups vegetable or chicken broth (water can also be substituted in a pinch!)
1 cup frozen corn
3 cups cooked black beans, drained and rinsed (or two cans)
½ cup chopped fresh cilantro
Optional: fixings for serving (sour cream, shredded cheese, avocado, hot sauce, limes, etc.)

**I do not add any fixings except The Dragon Sauce from Alex's Ugly Sauce
